This simple salsa is a summer staple in our house.
Its fresh ingredients are bright and festive, and most importantly, it’s healthy and DELISH.
It’s a real crowd pleaser, so give it a try for your next picnic or family bbq…I promise you won’t bring any leftovers home!
6 heads of corn, boiled 15 min, and corn sliced off
2 cans black beans, drained and rinsed
1/2 to 1 bunch of cilantro, chopped
1 can rotel, mostly drained
1 red pepper, diced
1/2 red onion, diced
2 or 3 garlic cloves, minced
1 lime, juiced
1/4 cup red wine or cider vinegar
1-2 tsp salt, give or take
1 Tbsp cumin, give or take
Pepper to taste
Mix together all ingredients, and let sit for a couple hours in the fridge.
Serve cold as a summer side dish, over grilled chicken, in a flour wrap,
or simply enjoy with a bag of tortilla chips.
